500g mixed green salad (lettuce, lollo rosso, lollo bionda, radicchio, rocket)
4 tomatoes
1 onion
1 yellow bell pepper
1 green bell pepper
1 bunch of scallions
100ml raspberry vinegar
160g Annes Feinste Organic Raspberry Preserve Extra
200ml water
salt, pepper
50ml salad oil
150g mixed seeds ((pine nuts, pumpkin seed, sunflower seeds, almond slivers etc.)
25g sugar
200g fresh raspberries
Clean and wash salad, wash tomatoes and cut out stalk and cut into slices. Rinse peppers, take out seeds and cut into fine stripes. Peel onion, cut in half and into fine stripes. Wash scallions and cut into fine rings. Blend raspberry vinegar, Annes Feinste Organic Raspberry Preserve Extra, and water with mixer, season to taste with salt and pepper and maybe some sugar. Add salad oil. Put tomatoes, bell peppers, and onion in marinade and let it sit for 15 minutes. Roast seeds without oil in pan, add the sugar to caramelize for ca. 20 seconds. Marinade green salads and arrange with tomatoes, bell peppers, and onion on a plate. Sprinkle with caramelized seeds and fresh raspberries. Garnish with scallion rings.
