For the cake base:
300 g cookies (butter or chocolate cookies)
150 g butter
50 g preserve extra or jelly of your choice
For the filling:
300 g cottage cheese oder 40% quark
50 g cream cheese
20 g starch
4 tbsp cream
2 eggs
100 g white chocolate
1. For the cake base: Chop the cookies in a kitchen mixer. Melt butter and add to the chopped cookies. Press the base into the baking tin (lined with baking paper) and leave to cool down. Then coat with preserve extra.
2. For the filling: Preheat the oven to 180°C (356°F) circulating air. Melt the chocolate over a water bath. Mix the rest of the ingredients, then add the melted and slightly cooled chocolate and mix in well. Pour into the hollow created on the biscuit base and bake at 180°C (356°F) circulating air for 20 minutes. The filling should not be too hard, but rather soft and creamy!
