1 baking mixture for plain butter cookies (plain sugar cookies)
100 g soft butter
1 egg yolk
100 g mascarpone
1/2 tea spoon lemon peel
125 g icing sugar
2 table spoons carrot juice
small eatable golden stars for decoration
150 g Rosehip Preserve of Maintal
1.Preheat oven to 180 °C (top heat and bottom heat). Mix baking mixture for plain butter cookies, butter, egg yolk, mascarpone and lemon peel and knead dough until smooth. Divide dough into portions. Roll out to a thickness of 4 mm between 2 sliced and floured freezer bags. Cut out stars and maybe moons (size 5 - 7 cm). Put on a baking tray with baking paper. Bake for 10 – 12 minutes on middle rack. Afterwards take the cookies of the baking tray and let chill.
2. Stir icing sugar with carrot juice until it has a smooth consistency. Put on half of the cookies the icing sugar carrot mixture and besprinkle then with small eatable golden stars for decoration. Let dry. Heat Rosehip Preserve and spread the rest of the cookies with it. Place the prepared cookies on the cookies which are spread with Rosehip Preserve.
