250 g flour
1/2 tsp. salt
1 tbsp. sugar
2 level tsp. baking powder
1/2 tsp. bicarbonate of soda
30 g butter
150 ml milk
Flour for rolling
Milk for brushing
Clotted cream
Jam of your choice
1. In a bowl, combine the flour, salt, sugar, baking powder and bicarbonate of soda. Cut the butter into small pieces and add it to the dry ingredients. Gradually add milk and knead to form a smooth dough. Let the dough rest in the fridge for about 15 minutes.
2. On a floured surface, roll the flour out to a thickness of about 2 cm. Use a glass or a round pastry cutter (approx. 6 cm diameter) to cut out the scones. Place on a sheet lined with baking paper and allow to rest for 5 minutes. Then brush with milk. Bake for about 10 minutes at 240 - 250 ° C (top/bottom heat) on the middle shelf of a preheated oven.
3. Let the scones cool a little then cut in half horizontally. Spread with clotted cream and jam.
