600g pork tenderloin
200g prunes
120g Plum Butter
80ml red wine
salt, pepper

1. Clean the pork tenderloin of tendons and fat and cut in 4 pieces of 150g each. Heat prunes, Plum Butter, and the red wine in a pot. Cut through the tenderloin lengthwise and expand opening. Fill the tenderloins with prunes and season with salt and pepper.
2. Heat a pan with dripping and sear tenderloins from all sides so the pores close. Put lid on pan and let simmer for 10 minutes at medium heat.
We recommend pasta and bell pepper vegetable as side dishes.
